Veggie curry
Ingredients:

1 big red bell pepper

1 broccoli head
-
2 cm piece of ginger finely chopped

1 zucchini
-
1 can coconut milk
-
2 tbsp curry powder
-
1 tsp turmeric
-
black pepper
To prepare:
-
To begin with put broccoli into steamer for 25 minutes
-
Meanwhile, chop bell peppers into small pieces and cook in a wok (or pan) with the ginger for about ten minutes at medium heat
-
Add curry, turmeric and pepper

Once done, add the broccoli
-
Spirilize the zucchini and add into the pan
-
Mix everything well and let sit for 2 minutes
-
Add coconut milk, bring to a boil and let simmer for around 15 to 20 minutes

Plate the dish and add some chopped cilantro and lime juice
-
You can serve it on its own or with a side of brown rice or quinoa
