Veggie curry

Ingredients:

  • 1 big red bell pepper 

  • 1 broccoli head

  • 2 cm piece of ginger finely chopped

  • 1 zucchini

  • 1 can coconut milk 

  • 2 tbsp curry powder

  • 1 tsp turmeric

  • black pepper

To prepare:

  1. To begin with put broccoli into steamer for  25 minutes

  2. Meanwhile, chop bell peppers into small pieces and cook in a wok (or pan) with the ginger for about ten minutes at medium heat

  3. Add curry, turmeric and pepper

  4. Once done, add the broccoli

  5. Spirilize the zucchini and add into the pan

  6. Mix everything well and let sit for 2 minutes

  7. Add coconut milk, bring to a boil and let simmer for around 15 to 20 minutes

  8. Plate the dish and add some chopped cilantro and lime juice

  9. You can serve it on its own or with a side of brown rice or quinoa
