Eggplant, mushrooms and dried figs scramble 

Ingredients:

  • 8 cremini mushrooms, sliced

  • 1 eggplant, diced

  • 5 dried figs, chopped

  • Cilantro, basil, black pepper

  • Optional: avocado

To prepare:

 

  1. Cook the mushrooms and the eggplant with a splash of water on a non stick pan (if possible)

  2. Once they are practically cooked add cilantro, basil and black pepper 

  3. Finally remove from heat and mix chopped figs while hot

  4. Enjoy! Its great added onto a salad but also delicious on its own 

Its really nice with avocado and a nice dressing of blended tomatoes, dates, celery, lemon juice, etc.
