Eggplant, mushrooms and dried figs scramble
Ingredients:

8 cremini mushrooms, sliced

1 eggplant, diced

5 dried figs, chopped

Cilantro, basil, black pepper

Optional: avocado
To prepare:

Cook the mushrooms and the eggplant with a splash of water on a non stick pan (if possible)

Once they are practically cooked add cilantro, basil and black pepper
-
Finally remove from heat and mix chopped figs while hot
-
Enjoy! Its great added onto a salad but also delicious on its own
Its really nice with avocado and a nice dressing of blended tomatoes, dates, celery, lemon juice, etc.
