I truly love salads, I find they are really helpful to get rid of cravings and get your greens in! I usually enjoy very simple salads as I find them easier to digest plus I know I will always have the ingredients I need at home. So this recipe isn't very complicated nor different, however it is easy and simple and great for anyone who doesn´t have much time to spend in the kitchen!

Ingredients:

  • GREENS - i love spinach, arugula, kale, and pretty much any other green

  • Herbs - coriander (i love it), basil 

  • Cucumbers - sliced or spirilized - if you don't have a spirilizer you can use a potato peeler - cucumbers are very hydrating, diuretic, alkalinizing, rich in vitamins and nutrients, known to be a great beauty food, etc. plus delicious!

  • Some kind of fruit - cherry tomatoes, mango, pear, apple, berries, avocado

  • Some kind of vegetable - mushrooms (raw or cooked in a non-stick pan), aubergines

  • A nice dressing! 

To prepare: 

My usual salad (family sized bowl) will consist of: lots of greens, about 1 cup chopped coriander, 1 or 2 spirilized cucumbers, some cherry tomatoes and a yummy dressing of blended tomatoes, celery and dates.
